Within about an hour, you can be at the coast near attractions like Newport’s historic bay front, charter boat tours, the Oregon Coast Aquarium, and Oregon’s beautiful ocean beaches. Any conversation about the pros and cons of Airbnb requires nuance and careful consideration. As a seasoned traveler, licensed property manager, and longtime Corvallis community member

Airbnb guests seek out local, independent restaurants. Nationwide, restaurants in communities with Airbnb rentals saw an average of 12% revenue growth, according to researchers at the University of San Diego. While it may seem obvious, it’s not just restaurants that benefit. Guests spend money shopping, dining out, attending events, and visiting attractions.

There are two parts to this concern. The first is that Airbnb rentals undercut local hotels and bed and breakfasts. Communities like New York City found that sometimes hosts found loopholes to avoid paying the local taxes that other lodging providers pay. These days, Airbnb and VRBO collect state and local lodging taxes, however, some individuals may fly under the radar.
While we are on that topic, we just want to point out that Fernwood Circle is a lodging intermediary tax collector registered with the City of Corvallis. For each short-term stay, the city, state, and county receive the same tax revenue they would receive from a hotel. Fernwood Circle is also the only locally-owned lodging intermediary registered (March 2024).

Corvallis happens to be the most rent burdened city in Oregon, according to the state’s Department of Land Conservation and Development. Oregon State University and Linn Benton Community College students tend to fill available rental units at specific times during the year. Throughout the rest of the year, vacancies are less frequent.
While short-term rentals don’t appear high on the city’s list of affordable housing concerns, it is a bigger issue in other Oregon communities that rely more on tourism. Short-term and medium-term month-to-month furnished rentals both serve an important role for renters who need more flexibility than the standard 9-month rental model. It also benefits local homeowners who are traveling or will temporarily live out of town but can’t commit to renting it out for a full year.

]]>Nestled near Central Park in downtown Corvallis, Castor Kitchen and Bar has carved out a unique niche in the local culinary scene. With a focus on seasonal Pacific Northwest ingredients, this gem of a restaurant artfully combines classic French techniques and Southern comfort to create a dining experience that is both sophisticated and welcoming.
The name “Castor” is Latin, French, and Spanish for Beaver. Not only is Oregon the “Beaver State” but Oregon State University’s mascot is Benny Beaver. This name not only reflects Castor’s focus on local ingredients and Northwest cuisine, but it also hints at French influences and techniques used by Executive Chef Danielle Lewis and her team.
We frequently recommend Castor Kitchen and Bar to our guests since it is one of the local restaurants that Alexandra Eder of Fernwood Circle Guest Houses frequents. We connected with Castor’s General Manager Evan Deffenbacher who offered insights into their vision and what makes it unique.
He told us, “We like to think we have the food and beverage content of a fancy restaurant with the welcoming, friendly vibe of hanging at a friend’s house. In short, It’s the kind of place we’d like to go and eat at.”

Castor’s approach to cuisine is centered around using local, seasonal, and sustainably harvested and foraged products. Executive Chef Danielle Lewis and the team draw inspiration from a mix of cuisines, held together with classic French techniques and a dose of Southern comfort.
Evan explained, “when we opened this place, we took inspiration from a few of our favorite restaurants. We have always been very particular about the quality of product we use and keeping things fresh, local and seasonal was priority one. Equally important was keeping it approachable to everyone and not getting too caught up in being a ‘fancy’ restaurant.”
Castor’s website states part of its mission is to support local, organic, and sustainable farmers, foragers, harvesters, fishermen, brewers, and winemakers. The menu makes use of each season’s bounty and celebrates the flavors and textures of the Pacific Northwest.
When you visit a restaurant for the first time, you probably want to try some of the most popular items. According to Evan, “Our most popular food item has always been our Filet Mignon Entrée as well as our Shrimp and Grits.”
A few other favorites include their Fried Shrimp, Steak Frites, and the daily seafood selection.
“We can’t forget about our house-punched Pommes Frites,” Evan added, “They’re literally just French Fries but prepared in the fancy French method. They’re pretty special.”
The attention to detail that elevates the common “French fry” is exactly what we and Fernwood Circle guests enjoy. It doesn’t stop with the food, the commitment to craft and ingredients also extends to Castor’s bar.
“When it comes to cocktails, our house Old Fashioned has been our most popular cocktail since we opened our doors in 2017,” said Evan.
Castor Kitchen and Bar’s decor and ambiance can be described as homey, and inviting. The interior is adorned with an abundance of house plants for a cozy atmosphere that reflects its commitment to showcasing the best of the Pacific Northwest’s seasonal ingredients.
“Our approach to hospitality follows suit with a friendly and welcoming vibe between our staff and guests,” Evan explained, “We aim for a “friends in our house” as opposed to a “customers in our business” feel.”
The overall ambiance at Castor is one of comfort and genuine hospitality, making it an ideal destination for a memorable meal with friends and family.
We know the challenge of traveling when you have food allergies or other dietary needs. We asked Evan to describe Castor’s approach to honoring their guests’ needs and preferences.
“We see that the folks with dietary restrictions or preferences are typically under served when it comes to options in restaurants,” he explained. “We’ve made it a priority to keep our menu largely gluten free. Our deep fryer in particular never sees gluten and we opt for rice flour where applicable to keep things GF.”
He explained that most of Castor’s menus have been at least 80% to 90% gluten-free by default. In addition, vegetarians will also always find something delicious to enjoy.
“We always keep a vegetarian entree on the dinner menu and a vegetable sandwich for lunch. Vegan can be a little trickier for us but we’re always happy to do what we can to accommodate folks.”

]]>We chose to highlight Del Alma since we often recommend it to our guests due to the delicious food, riverfront location, and gracious service. They may have the best burger in town if you prefer to keep it casual, but their elegant large plates and tapas suit a special occasion, business dinner, date night, or evening out with friends.
According to their website, the name “del Alma means “of the soul.” Owners Carolyn Krueger and Kinn Edward, as well as Chef Jeffrey Kimura, put their hearts and souls into it. We feel privileged that Carolyn took the time to chat with us about the inspiration behind Del Alma.
The team at Del Alma aims to provide a “warm and inviting and comfortable atmosphere.” Carolyn explained, “It’s one of those places where you can come in, and it can be casual. But it is also a great place for a special occasion dinner or a business dinner. “
On a sunny day, you can sit at an outside table facing the Riverfront park and multi-use trail. You will have a view of the Willamette River and of people enjoying the multi-use bicycle, jogging, and walking path. If you choose to sit inside, you may be able to choose between the cozy bar area and the more spacious dining room.
Around the corner, Del Alma also has a wine and dessert bar where you can enjoy the same menu items. According to Carolyn, the wine bar has a “little bit more of a casual vibe.” It may be a good option to grab drinks and appetizers with friends or for a more relaxed date night. The wine bar doesn’t take reservations, so your wait may vary.
“We just wanted to have some really interesting flavors and a lot of vibrant flavors. Just a little bit of spice but not too spicy,” Carolyn explained.
Co-owner Kinn brings years of bar and restaurant experience so the extensive menu of hand-crafted cocktails isn’t surprising. If you know the Willamette Valley, you may know that wine culture is strong here. In keeping with Del Alma’s cuisine, they offer an extensive wine list offering both “old world” and “new world” wines. As Carolyn explained, “We have focused more on Spanish wines and also wines from Latin America”
However, they also sell regionally and locally produced wines. She said, “We also definitely have a good range of local wines including Oregon Pinot. We’re focused on having wines that pair well with food. So they’re very food friendly wines!“

]]>Located near the riverfront in downtown Corvallis, TacoVino offers creative fusion tacos alongside more traditional fare like Al Pastor and fish tacos. The entire food menu is gluten-free and both omnivores and vegetarians will find something tasty. Thanks to the menu, friendly service, and relaxed ambiance, it is a favorite with Willamette Valley locals and visitors.
We caught up with co-owner John Sobolewski, who co-founded TacoVino, along with chef Jason Biga. John said that Jason enjoys creating taco versions of their favorite foods. Taco Vino’s rotating special menu highlights some of their recent experiments in taco creation as well as returning customer favorites.
“We wanted a restaurant where people could come twice a week and not get tired of it because we have a lot of options and to make it affordable,” John said.

Both John and Jason have been in the restaurant business as employees for years and had a dream of opening their own place. According to John, Jason had already come up with the name TacoVino before they met. The two previously worked together at another restaurant and would bounce ideas off each other.
As John recalls, “We clicked and we kind of complement each other. We wanted to do something that we were passionate about. We wanted to do food that we loved, and we wanted to do things a little bit better.”
They shared a vision for the kind of food they wanted to bring to the community. “We wanted to do food that was kind of made from scratch and we didn’t want to cut corners. I grew up in restaurants and that’s important to me. That was important to him as well.”
It all came together when their current space became available. John and Jason rolled up their sleeves and used their handy skills to build the space to fit their aesthetics and vision.
The focus is on tacos partially because they can keep tacos affordable while still using high-quality and locally sourced ingredients. While they describe the tacos as “inauthentic,” they “don’t cut corners,” and the team makes everything from scratch. For example, every day, they craft their corn tortilla from masa. Chef Jason exercises his culinary creativity by drawing from some of their favorite dishes and ingredients not commonly associated with tacos.
“Our idea was any of our favorite foods could be tacos,” John explained. “We eat out a lot and just think about food that inspires us.”
If you personally don’t enjoy tacos you have plenty of options, including salads like roasted chickpeas and greens or local farm beet salad. Larger plates or bowls, including their crispy duck plate, are also great options if you have a heartier appetite. Of course, you can also order the tacos without the house-made tortilla if you prefer a lower-carb lifestyle.

As the name implies, TacoVino has an extensive wine list and bar. “We wanted to represent wine, being in the valley here with world-class, amazing wine producers and grape growers,” As John explained, “We love wine. It’s a passion of ours!”
In addition to an extensive wine list, TacoVino offers three of their own house-made sangrias. John sees sangria as “a way to get people into a fun, relaxed version of the wine world.”
Their bar manager Matt infuses the same creativity into the drinks that Jason infuses into the menu. In addition to the three signature sangrias, rotating seasonal margaritas and other creative hand-crafted cocktails complement the fusion tacos.
The Willamette Valley is also home to quality craft beer. The TacoVino website indicates that the only thing that isn’t gluten-free on their menu is beer. Whether you enjoy craft beer, hand-crafted cocktails, wine, or non-alcohol drinks, they have you covered.
Since the staff at TacoVino make everything from scratch or to order, they can accommodate a range of dietary restrictions or lifestyles. Just ask your server for suggestions or let them know about any allergies.

TacoVino is located along the Corvallis riverfront so it is a great place to stop for lunch after a riverfront walk or bike ride. The downtown location and lively atmosphere also make it an ideal choice for a night out.
“It’s loud and a little chaotic,” John said while describing the vibe at TacoVino, “and it’s a fun place to be!”
When you set foot inside, you may notice a flood of bright colors, an extensive library of cookbooks, and eclectic art.
The friendly, knowledgeable staff describe the specials and are welcoming. Be aware TacoVino doesn’t take reservations, so you may have a short wait if you go during peak times. Often guests waiting for a seat enjoy a glass of sangria or their beverage of choice.
“Sometimes at night, it feels like a party,” John said.
If you fancy a dessert, you may be interested in visiting John and Jason’s downtown ice cream shop Sugar J’s Ice Cream Workshop. It’s just a short stroll from TacoVino and offers small-batch ice cream made from scratch.
“We love ice cream,” John said “It’s kind of similar to tacos since it’s histologic and timeless. We have an ice cream shop around the corner for a date night or a sweet treat after a taco.”

]]>If you are a craft beer lover, you should feel at home in Corvallis! Craft beverage enthusiasts have plenty of tasty options thanks to Corvallis craft breweries, wineries, cideries, and local kombucha brewers. Guests often ask, “What is there to do in Corvallis Oregon?” There’s plenty to do, whether visiting Oregon State University, working on a temporary basis for Samaritan Health Services, or following the Mid-Willamette Valley Food Trail.
If you enjoy beer, a visit to a Corvallis Oregon brewery is among the top things to do in Corvallis. The entire state is nationally recognized for its thriving craft beer scene. Although this scene is concentrated in Portland and Bend, other Willamette Valley cities like Corvallis are very much part of the scene.

Corvallis is home to Oregon State University which provides a steady influx of people who want a place to relax, socialize and enjoy a nice pint. Yet, the connection between Corvallis and beer goes deeper. In fact, Oregon State University is home to a Fermentation Science degree option.
Researchers from OSU’s Food Science department publish research sometimes leading to innovation and new techniques. This tradition and approach are, in fact, deeply rooted in Willamette Valley beer culture.
The mix of tradition and creativity comes through in every sip. The Pacific Northwest’s foodie culture also plays a role since quality ingredients are fundamental to a quality brew.
For example, Sky High Brewing is a Corvallis brewpub that offers unique craft beer in a premium yet casual atmosphere. Head brewer Paul Harwood of Sky High Brewing took a moment from his busy schedule to offer a few insights from an insider’s perspective.
“We approach brewing as holistically as possible,” Paul explained. “Good ingredients, good techniques, good ideas – all lead to good flavors!”
Sky High sources most ingredients from western states including Oregon, Washington, Idaho, and California.
“Everything from grains and hops to fruits and rose hips!” Paul said. “I would say about 90% of our sourcing by weight and dollar value comes from this area with the remaining 10% split evenly between domestic U.S. sourcing and international imports. Things like coffee for example are roasted here in town but ultimately come from abroad.”
According to Paul, he opts for sustainable ingredients such as grains and hops farmed using Salmon Safe, organic, or Dry Farm Certified techniques. In case you are unfamiliar with dry farming, it is a set of agricultural practices that don’t rely on irrigation. Locally, Oregon State University happens to be a leader in promoting dry farming techniques as sustainable options for the wine, beer and other agricultural industries. Consumers often notice more intense, “less diluted” flavors as a result of dry farming.
Corvallis brewers craft a variety of popular and sometimes unique beers. When asked about Sky High’s most popular brews, Paul replied that the Pilsner is a crowd pleaser.
He explained, “I think that the long standing consistency of this beer makes it a go-to for many of our regulars and a great choice for folks who are at the pub for the very first time.”
“It is crisp, and clean with a very well rounded grainy-bread flavor with very low sulfur that makes it super appealing to folks that want that ‘refreshing’ feeling from a beer. I think that it also adheres very much to the classic Bohemian style of pilsners which purists also appreciate and at the same time this is all achieved with 100% local ingredients (from Oregon or Washington).”
This blend of classics with a new twist draws people to the Corvallis breweries. Each of our local brewers draw from a similar blend of tradition, ingredient sourcing, creativity, and innovation.

Corvallis breweries often run tasting rooms or brewpubs where you can enjoy a craft beer or other beverages along with delicious food. The vibe is usually relaxed, unpretentious and friendly. In case you are unfamiliar with brewpubs, they are open similar hours to other bars and restaurants. However, it is always wise to check the website or social media page if you plan to visit a specific brewery.
Most local brewpubs are all-ages restaurants with a family-friendly atmosphere. Sky High is one of them.
Sky High is a multi-story brewpub with a mezzanine level overlooking the brewery on the ground. The main level features the full restaurant, bar, and covered porch along with a roof level that is open seasonally April-October complete with cornhole boards.
Paul explained the seasonal rooftop bar “is also full service, has cornhole boards and offers panoramic views of the downtown Corvallis and on clear days all the way to Mary’s peak in the Coast Range. It has a very relaxed and casual vibe to the whole place. Family friendly with a full service bar and gluten free options on the menu, there is just about something for everyone!”

Oregon, as a state, produces high-quality beer for a range of reasons. Water quality, great conditions for cultivating hops, and a unique beer culture contribute to the state’s success. The Willamette Valley, in particular, is home to unique, world-class craft breweries.
According to the Oregon Historical Society, a young German immigrant named Henry Weinhard purchased Portland’s first liquor license and opened Weinhard City Brewery. The brewery even survived prohibition by crafting near beer and root beer. Eventually, it was bought out and merged to form Blitz-Weinhard which eventually was sold to the Pabst Brewing Company.
Despite the fate of Portland’s original mega brewery, craft brewing thrived with a few ups and downs over the decades. The region’s industry still attracts creative and passionate brewers. In 1985, McMenamins opened Oregon’s first brewpub in Portland, and later opened additional pubs throughout the state including two in Corvallis.

]]>Corvallis offers ample opportunities to enjoy hiking, biking, paddling, golfing, boating, and other recreational activities. There are plenty of things to do near Corvallis, Oregon including hiking or biking the new Corvallis to Sea Trail linking the Willamette Valley to the Oregon Coast.
Even if you are not interested in committing to the whole journey, many portions of the Corvallis to Sea Trail are also suitable for a casual day hike, bike ride, or other outdoor activities.
We spoke with a couple of local outdoor enthusiasts who shared their insights into how to best enjoy these recreational opportunities. We spoke with Jim Blount who is the General Manager of Peak Sports and Gary Chapman who is the President of the board for the Corvallis to Sea Trail Partnership.

The Corvallis to Sea Trail is a 62-mile network of hiking and biking trails starting in Corvallis and ending at Ona Beach State Park near Newport, Oregon. Locals refer to it as the C2C Trail.
Since the C2C trail is really a network of interconnected trails, some of these individual trails are accessible to trail runners, hikers, or bikers who want to enjoy a day or morning outdoors.
However, experiencing the entire C2C trail often requires an overnight commitment. Willamette Week suggested serious hikers might want to make a C2C journey as training for a more ambitious Pacific Crest Trail voyage.
“Corvallis is located on the edge of Oregon’s Coast Range with year-round access to hiking, mountain biking, gravel biking, and paddling,” Jim explained.
Jim is the General manager of the popular Corvallis outdoor store Peak Sports. Peak Sports is a must-visit for outdoor enthusiasts visiting the Willamette Valley who enjoy mountain biking, paddling, climbing, or any other outdoor activity.
He told us: “I love any activity that gets me and my dog outside, especially biking and paddling in the forests and rivers in the Coast Range!”
Jim cycled the Corvallis to Sea bike path and camped several times with his dog, Charlie. For more information about visiting Corvallis with your pet, visit our guide on the topic.
“There are quite a few spots along the way where you can just get a very expansive view of the coast range,” said Jim. “It goes up around Mary’s Peak which is the highest point of the coast range.”

The journey from Corvallis to Newport is scenic thanks to the Oregon Coast Range and thriving forested areas. The mild climate makes many parts of the trail accessible for most of the year as long as you check conditions before you go.
“One of my all-time favorite adventures is biking the C2C trail. It ticks a lot of boxes: history, solitude, mushroom-hunting, rivers, forests,” said Jim. “And it all ends at the beach – what more could you ask for?”
“It’s a really awesome trail. It’s pretty unique because it connects the Willamette Valley to the coast range,” he previously told KOIN AM. “It passes through what was originally inhabited by Calapooya, Alsea and the Yaquina tribes. There’s just so much unique scenery and history along the route. One of the coolest things about it is it was entirely built by volunteers!”
Although it opened in 2021, the idea originated as early as the 1970s. Previously volunteers and staff from various state agencies and Oregon State University worked on creating a network of trails that would eventually connect the Willamette Valley and the Oregon Coast.
Over time this project fizzled out until 2003 when a group of volunteers formed the “Corvallis to Sea Partnership.” These volunteers spent over 50,000 hours constructing trails and connecting the existing patchwork of trails together.
Gary Chapman, president of the board for the Corvallis-to-the-Sea Trail Partnership, told us the trail has been well-received since its opening. Last June they installed kiosks and trail registers and officially opened the trail on August 21. Over 500 hikers and 250 bicyclists registered during the first seven months.
“Of these, about one third of each did the whole trail, the others merely sections,” Gary said. “That all totaled about 1500 hiker days and 750 bicyclist days.”
Like other members of the Corvallis-to-the-Sea Partnership, Gary is a volunteer. He got involved around 18 years ago: “It was a worthy goal… I knew the area somewhat having lived in Corvallis all my life, commuting to Newport for ten years, being in Boy Scouts and hiking around Marys Peak and Drift Creek.”
Depending on how fast you hike, you may complete the entire C2C hike in anywhere from two to six days, according to Gary. The norm is three to five days. Bike riders usually complete the entire trail in one or two days.
“It’s just about two half days of riding so it’s pretty easy to do it overnight,” Jim commented.

Jim recommended that you start with a good map of the C2C Trail. “Although the C2C Trail is very well-signed, the Coast Range has numerous logging roads and intersections that make it easy to get turned around.”
Maps are for sale at several sporting goods stores in the Willamette Valley and Oregon Coast. People may also order a printed map directly from the nonprofit Corvallis to Sea Partnership. Check their website for the current listing of locations where you may purchase a map.
As a local community member and volunteer for the Corvallis to Sea Partnership, Gary also had a few tips. His biggest suggestion is to thoroughly read the information on the C2C website that was compiled to help people plan their journey. In addition, he suggested trying individual sections as a day trip first.
According to All Trails, some prefer to start at the coast and end up in Corvallis, while most prefer to start in Corvallis.

“Consider doing section hikes to gauge the quality and difficulty of the experience,” Gary explained. “For bicyclists, it is possible to drive about 80% of the bike route, so that gives a great idea of the potential experience. Hikers especially need to know where to camp and not camp (camping on Forest Service lands only) and where the watering locations are. Both of these are shown on the map.”
The Corvallis to Sea Trail also asks that users avoid leaving any trace they were there other than their footprints. This is for users’ safety as food and other waste may attract wild animals and is to protect the existing ecosystem.
Our top recommendation is to book a guest house for a couple of days before or after your C2C excursion. This gives you an opportunity to get some much-needed R & R and explore the Corvallis area. Our guest houses are privately owned homes in real residential neighborhoods. We require a two-night stay due to the extensive housekeeping.
Finally, Visit Corvallis recommends using the NW Connector shuttle bus to get back to Corvallis after your hike. They run four trips daily between Corvallis and Newport.

Travel in groups of two or more for safety as well as companionship.
If you want to hike or bike the Old Peak Road section, you need a permit from Starker Forests. They issue the free annual permit but are not a source of C2C trail information. The Old Peak Road is just west of Philomath.
Those hiking the trail will need to camp. Overnight camping is only allowed on Forest Service land. The Big Elk Campground is located at a mid-point. Plan your camp stops in advance to ensure they are open and that you have the required permits.
Some parts of rural Oregon are without reliable cell phone coverage or in some cases any cell phone coverage at all. Jim Blount suggested that outdoor enthusiasts consider renting or buying a satellite communication device before venturing out into these areas.
Be aware that the forests are home to wildlife including black bears and cougars. While these animals usually avoid contact with humans, it is important to educate yourself about safety strategies. The National Parks Service issued guides to safety around bears as well as safety around cougars. One reason C2C asks users to follow PLANT guidelines (Please leave no trace) is to avoid attracting or disturbing wildlife.
Many of these tips apply to other activities in forested areas in addition to the Corvallis to Sea Trail.

You may hike or bike many of the trails in the Corvallis to Sea trail network without committing to the whole journey. In addition, there is a range of other activities ranging from golfing, paddling, and more.
